Hummus salad dressing

This delicious hummus dressing is the best way to use up leftover hummus. It's great for kale salad, grain bowls, or any dish needing a creamy, tangy flavour boost.

Ingredients
 

  • 3 tablespoons hummus, store-bought or homemade hummus
  • 2 tablespoons olive oil, or water for an oil-free version
  • 1 tablespoons lemon juice, more to taste
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon sea salt, more to taste
  • pinch cayenne pepper (optional)

Instructions

  • Place all ingredients in a medium-sized bowl and whisk until smooth and creamy. Or add everything to a mason jar and shake vigorously.
  • Taste and adjust the seasoning. Add more lemon juice if you want a more acidic dressing, and more salt to boost the savoury flavours

  • Refrigerate in a sealed container for up to one week.
