Gochujang Fried Rice With Kimchi

Don't know what to make for dinner? This Korean gochujang fried rice is an easy one-pan meal. Add leftover veggies, cooked protein, or simply top it with a crispy fried egg.

Ingredients

1 cup kimchi

2 Tbsp gochujang

2 Tbsp kimchi juice

1 Tbsp soy sauce

1 tsp sesame oil

2 green onions

3 cups cooked rice

2 garlic cloves

Use kitchen scissors to shred kimchi. Thinly slice green onions on the diagonal and mince the garlic cloves.

Prep your ingredients

In a small bowl, mix the gochujang, kimchi juice, soy sauce and sesame oil and set it aside

Mix the sauce

Place a wok over medium-high heat. Add the green onions and garlic. Cook until fragrant. Then add the kimchi.

Stir-fry aromatics

Add the cooked rice on top of the kimchi. Pour over the gochujang sauce and stir-fry everything together for 3 minutes.

Add the rice

Use the back of your spatula to gently press the rice into the pan.  Reduce the heat to medium and let the rice caramelise in the pan for 2 minutes.

Serve gochujang fried rice

Transfer the gochujang fried rice to a bowl and scatter with the reserved spring onions.
