Quick and easy udon noodles with a spicy Korean gochujang sauce.

Don't know what to make for dinner?  You can have a bowl of spicy udon noodles on the table in under 15 minutes. Add leftover veggies and crispy tofu, or a crispy fried egg.

Gochujang noodle sauce ingredients

2 Tbsp gochujang

2 Tbsp soy sauce

2 Tbsp water

2 Tbsp rice vinegar

1 Tbsp sesame oil

1 Tbsp brown sugar

Grab a small bowl and whisk together all the gochujang noodle sauce ingredients.

Make the noodle sauce

Cook your favourite noodles according to the packet instructions. I use fresh udon noodles.

Strain the noodles in a colander and rinse it with cold water. Set the cooked noodles aside until needed.

Add sliced green onions with the spicy gochujang sauce. Cook until thick and sticky.

Add the cold noodles and stir to coat in the glossy sauce. Cook for a minute, then serve.

Top your noodles with leftover veggies, crispy tofu and a fried egg.
