3 tablespoons hummus, store-bought or homemade hummus 2 tablespoons olive oil, or water for an oil-free version 1 tablespoons lemon juice, more to taste 1 tablespoon maple syrup 1 teaspoon Dijon mustard ΒΌ teaspoon sea salt, more to taste pinch cayenne pepper (optional)

Taste and adjust the seasoning. Add more lemon juice if you want a more acidic dressing, and more salt to boost the savoury flavours
