These roasted mushrooms are sweet, savoury, and umami-packed.  Utterly irresistible! They're perfect for  * meat-free burgers,  * tacos,  * or a satisfying snack.

Must I use pink oyster mushrooms?

You can use any oyster mushrooms.  I find the pink ones irresistible. You can also use other types of mushrooms. Simply adjust the cooking time.

Marinade Ingredients

1 garlic clove, minced

1½ T soy sauce

1 T maple syrup

2 T olive oil

1 t Chinese five-spice

pinch of salt

Preheat your oven. Clean the mushrooms and tear into bite-sized pieces.

Mix the marinade in a small bowl. Add to the oyster mushrooms and mix well.

Spread the mushrooms evenly on a parchment-lined sheet pan.
